- 12 oz bowtie pasta

- 1 package (8 oz) Velveeta cheese, cubed
- 1/4 cup cream cheese, softened
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) Rotel tomatoes with chilies, undrained
- Salt and pepper, to taste
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Cook the bowtie pasta according to package instructions. Drain and set aside, reserving 1 cup of pasta water.
- In a large skillet, heat olive oil over medium heat and brown the ground beef, breaking it up as it cooks. Drain any excess fat.
- Stir in Velveeta, cream cheese, cream of chicken soup, and Rotel tomatoes. Cook on medium heat, stirring until the cheese is melted and the sauce is smooth.
- Season with salt and pepper to taste.
- Add the cooked pasta to the skillet, mixing until well coated in the sauce. If the sauce is too thick, add reserved pasta water to achieve desired consistency.
- Optional: Stir in shredded cheddar cheese for extra cheesiness, then serve hot.
