- 1 pound firm Roma tomatoes, diced small
- 1 pound Persian cucumbers (or English cucumbers), diced small
- ⅓ red onion, diced very small
- ¼ cup fresh parsley, finely chopped
- ¼ cup fresh cilantro, finely chopped
- 2 tablespoons fresh dill, finely chopped
- ¼ cup fresh green onions, finely chopped
- ¼ cup lime juice or verjuice
- 3 tablespoons extra virgin olive oil (optional)
- 1 tablespoon dried mint (or 2 tablespoons fresh mint), crushed
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon ground black pepper (adjust to taste)
Instructions
- Dice the tomatoes, cucumbers, and red onion into small, uniform pieces (about ¼ inch).
- Chop the fresh herbs (parsley, cilantro, dill, and green onions) finely.
- In a small bowl, whisk together lime juice (or verjuice), olive oil (if using), dried mint, salt, and pepper.
- Combine the diced vegetables and chopped herbs in a large salad bowl.
- Pour the dressing over the vegetables and toss well to combine.
- Chill the salad for 30 minutes to allow the flavors to meld together.
- Serve chilled, adjusting seasoning if necessary, and enjoy!
