Description

Shirazi Salad is a refreshing and healthy Persian cucumber and tomato salad, packed with fresh herbs, lime juice, and a tangy dressing. This simple yet flavorful salad is perfect for pairing with grilled dishes, rice, or as a standalone light meal.


Ingredients

  • 1 pound firm Roma tomatoes, diced small
  • 1 pound Persian cucumbers (or English cucumbers), diced small
  • red onion, diced very small
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup fresh cilantro, finely chopped
  • 2 tablespoons fresh dill, finely chopped
  • ¼ cup fresh green onions, finely chopped
  • ¼ cup lime juice or verjuice
  • 3 tablespoons extra virgin olive oil (optional)
  • 1 tablespoon dried mint (or 2 tablespoons fresh mint), crushed
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon ground black pepper (adjust to taste)

Instructions

  1. Dice the tomatoes, cucumbers, and red onion into small, uniform pieces (about ¼ inch).
  2. Chop the fresh herbs (parsley, cilantro, dill, and green onions) finely.
  3. In a small bowl, whisk together lime juice (or verjuice), olive oil (if using), dried mint, salt, and pepper.
  4. Combine the diced vegetables and chopped herbs in a large salad bowl.
  5. Pour the dressing over the vegetables and toss well to combine.
  6. Chill the salad for 30 minutes to allow the flavors to meld together.
  7. Serve chilled, adjusting seasoning if necessary, and enjoy!
